So we have sort of become chocolate chip cookie connoisseurs during this quarantine. I usually only end up baking cookies around holidays or birthdays, but like many others found myself baking more than usual the last month or so. Chocolate chip cookies have been particularly great to have on hand as a treat for everyone and to divert the kids attention when things are getting too crazy (yes, I use chocolate chip cookies as bribery). I’ve tried a couple different recipes out, and wanted to share 2 that I’ve had good results from and that my family loved. One recipe calls for 3 cups of flour, while the other uses 1 1/14 cups of flour.
A week or so ago I was running short on flour and realized I couldn’t bake my go-to chocolate chip cookie recipe. I started looking for another recipe that used less flour and came across one that made 2 dozen cookies with less ingredients that were pretty amazing. Given that a lot of ingredients may be hard to find right now, I’ve included baking substitutions in this post so you can still make some treats even if you are running low on certain things like sugar, eggs or butter.
I also have listed all the ingredients for each recipe in a graphic below. I know when checking out recipes I usually quickly scroll down a blog post first thing to see if I have everything on hand to bake a recipe. So I wanted to put that in an easy to see place where you can reference right away if you have everything you need, and if you don’t, hopefully one of the baking substitutions listed here is helpful. So whether you are working with a 5lb bag of flour and no eggs, or are low on flour with lots of butter you may still be able to make something work out!

Ingredients
- **3 Cup Flour Cookie Recipe:*
- 3 cups all-purpose flour
- 1 cup salted butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 tsp vanilla extract
- 2 large eggs
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp sea salt* (optional)
- 2 cups chocolate chips

- **1 1/4 Cup Flour Cookie Recipe:*
- 1 1/4 cups all-purpose flour
- 1/2 cup salted butter, softened
- 1/3 cup + 2 tsp granulated sugar
- 1/2 cup packed light brown sugar
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 large egg
- 1 1/2 cups semisweet chocolate chips
Instructions
- *for 3 cup flour recipe, preheat oven to 375 degrees, for 1 1/4 cup flour recipe, move on to step 2
- you will need 2 bowls, 1 for dry ingredients and 1 for wet ingredients
- mix your flour, baking soda, salt* together in the smaller of the 2 bowls with a whisk to combine
- in the larger of the 2 bowls, add softened butter and sugars. mix with a hand mixer or a by hand until mixture is smooth
- add eggs and vanilla to butter mixture and continue to mix until everything is blended
- slowly add flour mixture until all is mixed in
- add chocolate chips
- *if making the 1 1/4 cup flour recipe, now is the time to chill for 30 minutes and preheat oven to 350 degrees
- scoop tablespoon sized amount onto ungreased cookie sheets
- for 3 cup flour recipe, bake for 10-13 minutes; for 1 1/4 cup flour recipe bake 10-12 minutes
