I had been meaning to make something with these blood oranges for a while but couldn’t decide on just what that would be. Since I didn’t want to: A. bake anything on the unhealthy side or B. have something sweet, I opted for this blood orange-strawberry smoothie recipe. It ended up being so fresh and delicious and bonus for that pretty pink color! Plus, it was the first time I tried a smoothie with my new favorite sweetener that I’m so glad I started using (you can find it here). It’s low on the glycemic index and has something like 17 vitamins and minerals in it.
If you’re looking for a breakfast option for Valentine’s day that’s on the lighter side, definitely give this a try! It’s the perfect time of the year with citrus season still around when you can easily find blood oranges. Although, I still remember the one time my hubby surprised with chocolate ganache pancakes for breakfast in bed. And yea, they were as spectacular as you can imagine. So maybe chocolate ganache pancakes with a blood orange-strawberry smoothie on the side this year.
Ingredients
- 1 Cup Frozen Strawberries
- 3 Small Blood Oranges, peeled
- 1 Cup Almond Milk (or milk of your choice)
- 1/2 Cup Greek Yogurt
- 1 Tablespoon Coconut Nectar
Instructions
- Combine everything in a blender.
- Cover and blend until smooth.
- Serve immediately.
