We are in the midst of such a busy time now that the holidays are in full swing. Between cooking elaborate meals, busy schedules and getting everything checked off our to-do lists, having a simple go-to recipe is crucial. This super easy stuffed pepper soup recipe only takes 5 ingredients. It’s a lifesaver on busy nights when you are pressed for time or tired but don’t want to get takeout.
I pick up all my ingredients for this easy stuffed pepper soup recipe from Trader Joe’s. However, you can use whichever brands you have on hand or use whatever your favorites happen to be. I’ve already made this recipe twice this month!
Another great thing about this soup recipe is that it makes a pretty big pot. More than enough that you’ll have plenty leftovers. Using only one pot to cook and having extra food is a win-win in my book! I think one of my least favorite things (especially when you’re busy) is having to wash a bunch of pots and pans after cooking. Ingredients
- 2 (32 oz each) boxes organic creamy tomato soup (low sodium)
- 1 lb ground turkey
- 1 10.5 oz packet fully cooked brown rice or 2 Cups pre-cooked rice
- 2 green peppers, diced
- 2 tbsp taco seasoning
- Seasoning and Cooking:
- Salt and Pepper
- Olive Oil
- Optional: Greek yogurt
Instructions
- In a large pot, heat olive oil then cook ground turkey with salt and pepper. Transfer to a plate when finished.
- Heat olive oil in same pot and add diced green peppers. Saute for about 5 minutes. Add turkey back to pot and mix.
- Add both boxes of tomato soup, taco seasoning and rice. Stir to thoroughly combine.
- Let simmer until heated through.
- Optional: Serve with a dollop of Greek yogurt.
